HOMEMADE MANGO FISH TACOS


*what you will need:
(makes 3-4 servings)
1 1/2 cups flour
4 cups canola oil
3 pieces of frozen mahi-mahi fish
pepper
chili powder
*feta cheese 
(if desired)

cumin seed
sea salt
crushed red pepper
*Sauce:
1 mango
2 tsb cilantro



#1 thaw out fist - place in bowl with COLD water (you don't want to use warm water because it will begin to cook the fish and cause bacteria to grow.)

#2 dice fish into about 3/4 cubes




#3 place 2 cups of flour into bowl and season with *estimate of pepper, chili powder, cumin seed, sea salt, and crushed red pepper.

#4 place cubed fish in flour mix and toss. *use strainer to sift out flour.



#5 put fish into hot oil and fry *use a small strainer to take out fish when finished. 


#6 place in bowl/strainer and let cool

#7 chop mango and cilantro and place in blender

#8 blend and serve with fish


#9 serve fish with corn tortillas, * pico de gallo , feta cheese and mango sauce.

HOMEMADE PICO DE GALLO


*gluten free

what you will need:
*makes a medium sized batch
1/2 red onion
10 cocktail tomatoes 
1/4 cup cilantro
1 jalapeno
lime
sea salt

#1 Cut top of onion off, peel, rinse (this makes the fumes not as strong so your eyes won't water), cut in half, set other half to the side, cut remaining half into crescent shape, begin dicing the corner of the crescent and move it in a U shaped direction as you are dicing (*this is a good trick to use when dicing an onion because it is less effort), place in bowl.







#2 Dice tomatoes and place in bowl.

#3 Cut jalapeno, take out seeds (the seeds are the really spicy part), dice and place in bowl.

#4 Dice cilantro and place in bowl.
*add lime + salt to taste

#5 Stir & Enjoy

HOMEMADE GUACAMOLE


* gluten free

What you will need:
1 large hass avocado
1/2 cup plain greek yogurt
salt
pepper
chili powder
cumin seed
lime juice


#1 Cut avocado in half, take out seed, mash with fork, place in bowl.


#2 Add greek yogurt


#3 *to taste add salt, pepper, chili powder, cumin seed, and lime.

#4 Stir & Enjoy!
*This is so good! You can make it in just a few minutes :)

HOMEMADE CORN CHIPS


*gluten free
What you will need:
corn tortillas
4 cups canola oil 
sea salt
lime juice

#1 take out the corn tortillas & cut them into 1/8 slices


#2 put 4 cups of oil in pot, heat oil (wait until oil is hot before adding tortillas) *use a deep pot to keep boiling oil from spitting up at you.

#3 place cut tortillas in oil & stir occasionally

#4 wait until slightly brown, remove with tongs then place into strainer


*Add sea salt + lime *to taste
#5 let cool and serve!
